Bombo Italian Kitchen, Downtown Seattle

New restaurant by Ethan Stowell blends traditional Italian cuisine and cooking techniques with seasonal Pacific Northwest ingredients.

 

Ethan Stowell, one of Seattle's most acclaimed restaurateurs, opened Bombo Italian Kitchen on June 20th at the new Seattle Convention Center.

The menu at Bombo combines seasonal Pacific Northwest ingredients in traditional Italian cuisine and cooking techniques, and the restaurant is open for breakfast, lunch, dinner, and late night dining, and drinks. For lunch and dinner, the menu includes pizzas, salads, Stowell's signature pastas, and entrees like alaskan halibut with corn, foraged mushrooms, and mustard greens, or the roasted chicken with caponata, salsa verde, pine nuts, and sultana.


The most anticipated menu item may be what Bombo's chefs are calling the "Brizza," a small, personal-sized breakfast pizza with your choice of toppings. Guests can choose from savory options, such as the Buongiorno with applewood bacon, a farm fresh egg, or beecher's dulcet, or sweet breakfast pizzas such as the cinnamon and brown sugar-covered Canella.


Bombo Italian Kitchen joins Ethan Stowell's other restaurants throughout the region, including How to Cook a Wolf, Cortina, Ballard Pizza Company, and more.
