Equal parts pizza joint, bottle shop, and bar, the small but mighty Blotto on Capitol Hill specializes in crispy pies with ultra-thin crust.
It may not look like much as you walk by, but the team inside Blotto is wood-firing what might be Seattle's most-coveted pizza. The Seattle Times recently described Blotto's pies as "a pizza of complexity and beauty, one that could vie for a spot at the table at a very fine restaurant."
Blotto sources ingredients for its seasonal pizzas from local producers, including Ferndale Farmstead, Olsen Farms, and Cascade Creamery, among others. Seasonal pizzas currently on the menu include:
Pepperoni + Peppers: tomato, aged mozzarella, Ezzo pepperoni, Mama Lil's sweet hot peppers, pecorino, and parmesan
Hot Honey Calabrese: tomato, aged mozzarella, Creminelli calabrese, house hot honey, red onion, pecorino, and parmesan
Mushroom + Green Sauce: lemon cream, aged mozzarella, provolone, roasted criminis, pistou, and pecorino
